Steaks can be expensive when you dine out. You can make them at home for so much less. You can recreate the special dining out experience of a perfectly cooked steak at home. Here is what you should do. Allow steaks to reach room temperature by allowing them to rest outside of the refrigerator before cooking. Preheat oven to 350 degrees. Season steak liberally with salt. Pour a couple of tablespoons of vegetable oil into a pan, preferably an iron skillet. Brown steak on both sides. Then place into the oven to finish the cooking. You will want to adjust your cooking time for thickness of the steak, as well as how done you like your steak. I advise getting a meat thermometer and cook the steak to about 5 degrees below the final temperature. The steak's temperature will rise a bit after you take it out of the oven. I cooked my steak for about 5 to 8 minutes in the oven at 350 degrees. Strip Steak Prep Time: 30 mins Cook Time: 12 mins Total Time: 42 mins Author: Susie Bulloch (heygrillhey.com) Ingredients 2 Strip Steaks Coarse Kosher or sea salt coarse ground black pepper Garlic Thyme Compound Butter (optional) 4 Tablespoons salted butter softened 2 cloves minced garlic 1 teaspoon Worcestershire sauce 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme leaves Instructions 30 minutes prior to grilling, remove your steaks from the refrigerator, season on both sides with the coarse salt and allow to come up in temperature. Preheat your grill to High heat. You're looking for temperatures around 900 degrees F on the grill grates. Combine all ingredients for the compound butter in a small bowl. Place one spoonful of butter directly on your serving platter underneath where each steak will be placed. Do this before you get your steaks on the grill so when they come off, you can set each steak on a spoonful of the butter. Set aside the remaining butter for the top of the grilled strip steaks. Place the steaks directly on the grill grates at a diagonal. For a medium rare steak, cook 2-3 minutes, then rotate 45 degrees and grill for 2-3 more minutes. Flip the steaks over, cook 2-3 minutes, then rotate 45 degrees and grill for 2-3 more minutes. Increase or decrease cooking time as needed to reach ideal internal doneness. For a rare steak, cook to 125 degrees F, Medium Rare to 135 degrees F, Medium to 145 degrees F, Medium Well 155 degrees F, Well Done to 160 degrees F. Remove the steaks from the grill and set each steak on the dollop of prepared compound butter. Let the steak rest for at least 8-10 minutes before slicing. Sprinkle with the black pepper just before serving.

To achieve this, we use a two-pronged approach. First, place steaks on wire rack set in rimmed baking sheet. Rub entire surface of steaks with mixture of 1 tablespoon cornstarch and 2 tablespoons kosher salt. Place steaks, uncovered, in freezer until very firm, about 30 minutes. Light a large chimney starter filled with charcoal (about 6 quarts) and allow to burn until the coals are partially covered with a thin layer of ash, about 20 minutes. Build a single-level fire by arranging the coals evenly over the bottom of the grill and place the wood chunks directly on the coals, spacing them evenly around the perimeter of the grill. Set the cooking grate in place, cover, and heat the grate until hot, about 5 minutes. Use a grill brush to scrape the cooking grate clean. Dip a wad of paper towels in vegetable oil; holding the wad with tongs, oil the cooking grate. How to Cook Steak: Season the steaks with black pepper. Place the steaks on the grill, cover, and cook until the steaks begin to char, 2 to 3 minutes. Uncover the grill, flip the steaks, and cook on the second side until beginning to char, 2 to 3 minutes. Flip again and cook the first side until well charred, 2 to 3 minutes. Flip one last time and continue to cook until the second side is well charred and the center of the steak registers 115 degrees for rare (about 2 minutes) or 120 degrees for medium-rare (about 4 minutes) on an instant-read thermometer. Transfer to a large plate and let rest, loosely tented with foil, for 10 minutes. Slice and serve. Today we’re smoking a NY Strip Steak in the Masterbuilt smoker and making a Bourbon-Compound Butter. This is the same idea as the reverse-sear method. We are using our Masterbuilt Electric Smoker with some wood chips then moving our steak to high heat on the grill (you could also use a cast iron skillet on your stove). Ingredients • 2 NY Strip Steaks, about 2 to 2.5” thick • Stubb’s Steak Rub (you could substitute Kosher Salt and Cracked Pepper) • 1 stick salted butter • 1 green onion top (green part), chopped • 1 tbsp chopped parsley, chopped • 1 tsp smoked paprika • 1.5 - 2 tbsp Weller’s Kentucky Bourbon Instructions 1. Set the butter out on your counter at room temperature until it softens. 2. Add the butter, green onion, parsley, paprika and Bourbon to a bowl and mix well. 3. Move the butter mixture to plastic wrap. Roll up in the plastic wrap then place in the refrigerator until the butter hardens. 4. Set the Masterbuilt Smoker to 225 degrees F and add pecan wood chips. 5. Place the NY Strip steaks in the smoker. 6. For medium rare, remove the steak when it reaches 129 to 132 degrees F. This will take a bit less than 1 hour depending on your actual smoker temperature and outside temperature. 7. Move the steaks to high heat on the grill and sear both sides. This only takes about 2 minutes per side. 8. Remove the steaks from the grill and cut a couple of slices of the Bourbon Butter and place on the steaks. 9. Let the steaks rest for 10 minutes. 10. This is one of my favorite ways to cook strip steak. Experimenting with my GoPro and new Canon 70D to record some of my cooking. Also my first attempt at editing multiple cameras together with Premiere CC. No sound for this one. I have seen a lot of comments (some rather sarcastic) about the lack of sound. It got messed up by fan noise and some mistakes I made while recording. I decided to upload without sound. I could have added music but not sure that really adds anything. New York Strip steaks have a bit more flavor than Filet Mignon, but still are very tender, and one of my favorite "premium' cuts of steak. Whenever I'm trying a new steak house, I typically go for the New York, as it's a great test, to see if they can get the perfect seared crust with a perfect medium rare center. You can cook that same perfect New York Strip at home, using a combination of the stove top and the oven. For my technique, I use a very hot pan to quickly sear both sides of the well seasoned steak, and then move it into a 400 degree oven. You'll only need to leave it in the oven for a few minutes to get a med-rare, my preference. You can leave the strip in for a few more minutes per level of doneness (med, med-well, well done). New York Strip is one of my favorite cuts. Today there was no experiment, we just wanted to eat an awesome steak. By cooking these New York Strip Steaks the way I cooked we have achieved perfection on this cook. They came out PERFECT! I put a final decision on how to use garlic in your steak cooking sous vide! After several subscribers brought to my attention that raw garlic should not be used with sous vide I decided to find out the best way to use it. I really tested GARLIC on this video. I used garlic powder, garlic paste, minced garlic and raw garlic (which I decided to roast it to maximize the flavor and also to avoid the raw garlic situation) For this experiment I used New York Strip steak! They were all 1 1/2 inch thick and the best steaks available at the butcher shop that day. As you know in my recipes I always use raw garlic and I wanted to put a final decision on this experiment and answer the question what's the best way to use garlic with sous vide. I was so socked by the results I still can't believe it. The result shocked me more than the butter experiment. I am a huge fan of garlic and this video is a total shocker. How To Cook A Perfect Steak - In The Oven And Pan Seared On The Stove - Easy to Make Recipe Here is a link to the meat thermometer I use: http://amzn.to/2cLLnvd Hello, In this episode I will show you step-by-step how we cook the perfect pan seared steak without using a BBQ grill or special rubs. Here are the ingredients I use for my pan seared steaks: 1. Kosher salt 2. Black pepper 3. Butter 4. Garlic 5. Spray oil Here is the step-by-step process I use to make my pan seared steaks just perfect: 1. I buy the steaks 4 to 5 days before we are going to cook them. 2. I seal the steaks well and let them sit in the refrigerator for 4 to 5 days 3. I take the steaks out of the refrigerator about 30 minutes before I'm ready to cook them 4. Preheat the oven to 275 degrees 5. Use the kosher salt to cover the steaks on all four sides 5a. Add black pepper to the steaks 6. Put foil in a backing dish and spry it with oil 7. Place the steaks in the backing dish and put the meat thermometer in one of the steaks 8. Bake until the internal temperature of the steaks reaches 125 degrees (about 35-40 minutes) 8a. While the steaks are cooking in the oven, I melt one stick of butter and mix with minced garlic 9. Take the steaks out of the oven 10. Spray large pan with oil and set the burner to "high" to sear the steaks 11. When the oil starts to sizzle, carefully place the steaks in it 12. Sear each one of the 4 sides for about 45 seconds each (for medium rare to medium) 13.After you take the steaks out of the pan, slice one of them to check if done to your taste. 14. Spread butter and garlic on both sides of the stakes As a side to our perfect oven baked pan seared steaks, we usually have steamed asparagus with sea salt, or steamed green beans with garlic, spry oil, salt and dill (dry or fresh depending on the season). You can also use the extra butter and garlic mix to sprinkle on your veggie side of choice. P.S. This is always more than enough for one meal, so we hardly ever have a third option on the plate.
